I love sparkling wine. I have a fondness for the distinctive fizz from Spain, also sparkling wines made in California, England and South Africa impress, and the gentle sparkling Prosecco from Italy are welcome.

But Champagne is the fizz I always return to. A half bottle as aperitif before Sunday roast, or a bottle with a pizza. There's hardly an occasion or meal that Champagne doesn't improve.
